Grapefruit Tequila Sour
This grapefruit tequila sour cocktail is a twist on the vintage classic sour. It's tangy and not too sweet flavor is kicked up with infused tequila blanco and a little hibiscus syrup for a pretty color and flavor.

Ingredients
2
ounces
Tequila
I used a grapefruit hibiscus flavor but plain silver is fine, too.
2
ounce
ruby red grapefruit juice
½
ounce
hibiscus syrup
use less or more as desired
½
lime
plus more for garnish
1
teaspoon
pasteurized egg white
1
grapefruit wheel
for garnish
½
teaspoon
sugar
for garnish
1
hibiscus flower in syrup
for garnish - optional
Instructions
Keep the tequila in the freezer until ready to use. That way you don't need to add ice.
Prepare the glasses by adding a hibiscus flower and a grapefruit wheel to each.
Add the tequila, grapefruit juice, and hibiscus syrup to the shaker. Squeeze half a lime into the mixture.
Shake to mix.
Add the teaspoonful of egg white and shake vigorously for about 1 minute. Don't add ice! This is called a dry shake.
The mixture will be very foamy and light pink. Pour it into your prepared on the rocks glasses.
The layers will separate almost immediately with the foam rising to the top.
Serve.
For Bruleed Grapefruit Wheels
Slice a grapefruit into thin wheels.
Sprinkle with sugar.
Use a plumber's torch to melt the sugar and char it just a little.
Let cool and use as desired.
Notes
Expert Tip:
Be sure to dry shake the tequila sour ingredients then add ice or you'll end up with frozen chunks of egg white in your drink.
If you are uncomfortable with raw egg you can use the pasteurized egg whites from the store.
If you don't want to use egg white at all just leave it out. It will still be delicious - it just won't have the creamy foam.
Ruby red grapefruit juice is best for this cocktail.
Cut the calories by leaving the hibiscus syrup out if you wish.
Keep your Tequila in the freezer. It won't freeze but it will be super cold. No need to add ice and dilute your drink!
