Similar to a Pina Colada, this creamy Blue Hawaiian is made with rum, blue curacao, pineapple juice, and cream of coconut for a luscious tropical treat with a kick. It's perfect for relaxing by the pool! Serve it on the rocks or frozen and slushy.
1 ½ouncecream of coconutlike Coco Lopez. Also called creme de coconut or creme of coconut. This does not contain alcohol.

blue sugar crystals
maraschino cherriesfor garnish
Instructions
Dip fingers in cold water and run around the rim of a glass.
Pour sugar crystals into a flat dish.
Roll cup rim in the sugar crystals to coat.
Set aside.
Add the rum, Blue Curacao liqueur, pineapple juice, cream of coconut, and ice to a blender.
Blend until smooth.
Pour into a glass, top with a maraschino cherry, or garnish with a pineapple wedge, and serve.

Storage:If you have any leftover cream of coconut be sure to store it in an airtight container in the fridge.If you happen to have made a pitcher of Blue Hawaiian Cocktails and you have some leftover put it in an airtight container and refrigerate. It will be fine for 2 or 3 days. Shake before pouring.Tips
Try using coconut rum or pineapple rum.
Make this a non-alcoholic mocktail by leaving out the rum and blue curacao. Use blue curacao syrup, which is non-alcoholic. One brand that makes it is Torani and you can find it on Amazon.
Leave the coconut cream out and use coconut water or cream soda for a lighter drink.
