🔪 Instructions
This is an overview of the instructions. Full instructions are in the green recipe card at the bottom of the page.
- Season boneless, skinless chicken breasts and place them in the crockpot with the onions.
- Add chicken broth, cream of chicken soup, and cream cheese. Cook.
- Shred the chicken. Then, stir it back in and add the mixed vegetables.
- Toss in the cooked noodles. Enjoy!
🥫 Storage
In the crockpot, this chicken and noodles dish can stay warm all evening—if you need it to. Once the last family member has finally eaten dinner, let it cool down a bit.
Then, scoop the extras into an airtight container and refrigerate or freeze them. In the fridge, the yummy meal will last for up to four days. However, you can stretch it to three months by using the freezer.
Leftover crockpot chicken and noodles is easy to reheat in the microwave or on the stove over low heat. Just make sure to let it thaw in the fridge, first, if it's frozen.
📖 Variations
- The next time you have boneless chicken thighs to use up, try them in this slow cooker recipe! Dark meat adds extra rich flavor.
- Don't have the chicken soup? That's okay—cream of celery will work!
- You can make your own chicken stock with water and bouillon cubes.
- Feel free to toss in your own blend of vegetables, or experiment with other kinds. Green beans, asparagus, broccoli, corn, cauliflower, and fresh mushrooms are tasty—there are so many options!
- Sometimes I'll add a bay leaf or fresh thyme to the creamy sauce—it makes the flavor taste like homemade chicken noodle soup! Just remember to remove them before serving.
- Tender egg noodles taste best, but you can switch them out accordingly to your personal preference. Any type of cooked noodle will work.
- If you're avoiding pasta, or just ran out of it, try stirring in cooked rice.
- You can swap half of the cream cheese for sour cream if you want to lighten up the recipe a little bit.
- Fresh herbs add a scrumptious finishing touch! Try snipping some parsley or sprinkling a little poultry seasoning overtop this creamy chicken and noodles recipe.
- Make it on the stovetop using precooked, shredded chicken and cooked noodles. Stir everything together until it's hot and the veggies are thawed.
💭 Things to know
Expert Tip: Don't add dry egg noodles to the crockpot. There's not enough liquid in the recipe to cook them, so your dinner will be crunchy—and not in a good way!
- For extra juicy, tender chicken, store it in the fridge in a brine solution. Use one-quarter cup of salt per four cups of water in a large Tupperware. The best part is that you can do this straight from the store—no more leaky, sticky chicken packages dirtying up your fridge!
- If you don't feel like cutting an onion, buy one pre-diced from the grocery store. The packages are usually near the fresh produce section.
- Chewing gum while cutting an onion prevents some peoples' eyes from watering up! It's worth a try if you can't help but cry!
- The cream cheese melts faster and more evenly when you dice it up, first.
👩🍳 FAQs
Go right ahead! There's nothing wrong with that. Enjoy!
Yep! Though, I don't recommend cooking them quite all the way. Fresh veggies will continue to soften a bit in the crockpot, so, for best results, just blanch them.
You can, but you'll also need to greatly reduce the cook time to account for pre-cooked chicken. Essentially, you just need to warm it up to avoid dry meat! For rotisserie chicken, I'd use this recipe.

Do you have to use the crème cheese /sour crème? Does it thicken the chicken & noodles? Can the recipe be made w/out it?
Marye says
You can make the recipe without it if you want to.... but then it's a different recipe. 🙂
