- boneless skinless chicken breast or chicken thighs
- crushed pineapple or pineapple chunks
- teriyaki sauce (try my easy, homemade recipe)

- Add diced bell pepper.
- This is good with a pinch of crushed red pepper flakes(red chile flakes) to spice it up.
- You can also use a spicy red chile sesame oil to add both heat and flavor.
- Either boneless skinless chicken breasts or boneless skinless chicken thighs are fine in this recipe.
- Brown rice has a nutty flavor and chewy texture. It's a delicious alternative to white rice.
- You can use whole chicken breasts with the bone in but it may have a longer cook time. Always check that the interior temperature is 165F.
- Shred leftovers and pile on a bottom bun. add a spoonful of cole slaw and top with the top bun. It makes a delicious sandwich!
- Use pork loin instead of chicken.
- Make a teriyaki chicken bowl by layering rice, the crockpot teriyaki chicken and pineapple, and steamed broccoli in a bowl. Spoon on a little more sauce and sprinkle the top with some sesame seeds or chopped cashews.

- Pour teriyaki sauce over the top. Cover and cook on low for 8 hours.
- Sprinkle with green onions and serve on top of rice. It's good with white rice, brown rice, or cauliflower rice.

Slow Cooker Pineapple Teriyaki Chicken

- 2 pounds chicken breast, boneless & skinless
- 20 ounces pineapple, chunks or crushed
- 1 cup teriyaki sauce
- 2 tablespoons cornstarch, optional
Instructions
- Spray the inside of a slow cooker with cooking spray.
- Place the chicken inside.
- Add the undrained pineapple and the teriyaki sauce.
- Cover and cook on low 6-8 hours or on high 4 to 6 hours.
- If the sauce seems to watery when the chicken is cooked dissolve the cornstarch in ¼ cup water and stir it in - then turn the slow cooker to high and cook with the cover off for 10 minutes or so.
