No Peek Chicken and Rice Casserole

- 10.75 ounces cream of chicken soup
- 10.75 ounces cream of mushroom soup
- 2 cups chicken stock
- 1 ounce onion soup mix
- 1 teaspoon rubbed sage, optional
- 2 cups white rice, uncooked
- salt and pepper, to taste
- 2 pounds boneless skinless chicken breast, or thighs
Instructions
- Preheat oven to 350°F.
- Spray a 13x9-inch casserole dish with no-stick cooking spray. Set aside.
- Add the soups, chicken stock, onion soup mix, and sage to a bowl.
- Mix until smooth.
- Stir in the uncooked rice and spread in the prepared pan.
- Season the chicken with salt and pepper then lay across the top of the rice mixture.
- Cover tightly with aluminum foil and bake (no peeking!) for 1 hour and 15 minutes or until the rice is tender and the chicken is cooked through. (160°F on an instant read thermometer).
- Remove from the oven and let stand about 5 to 10 minutes before taking off the aluminum foil and serving. The chicken will continue to cook to 165°F during this time.

I grew up on this casserole. Mom made it often, and it was at every church potluck in the 70's. It was the first dinner I learned to make,because it is easy and foolproof. We used water for the liquid, but I believe the broth in your recipe is a huge improvement. My boys also grew up on it, and they still ask for it. This is a good one.

Love this recipe, so quick and easy to prepare. I prefer to mix the dry onion soup mix into the condensed soup mixture rather than just sprinkling it over the tops of the chicken breasts. This way you get the flavor all through the rice and not just on top of the chicken breasts. Plus you can get it ready earlier in the day and then just bake when you want to.

This is in the top 3 of my favorite casseroles. It fits our schedule perfectly and I have everything, well except the onion mix what I have on hand is the beefy onion. I can taste it now, comforting and satisfying. Broccoli and an Arnold Palmer will round it out, maybe a slice of ice cream bread to end with on a slight sweet note.
