🔪 Instructions
This is an overview of the instructions. Full instructions are in the green recipe card at the bottom of the page.
- Whisk all ingredients except parmesan and pizza in a
mixing bowl . - Cut pizza and add into dish.
- Pour the egg mixture over the pizza. Top with Parmesan.
- Bake and garnish as desired before serving.
🥫 Storage
This breakfast pizza recipe is best consumed hot out of the oven. However, you can store the leftovers—if you have any leftovers, that is!
Cover the dish with aluminum foil or plastic wrap, or transfer the casserole to an airtight container. Refrigerate for up to three days.
Microwave individual portions in short increments of time, checking often until it's warmed up. Eggs can get tough if they're overcooked, so reheat carefully!
📖 Variations
- This recipe works just fine with grocery store or take-out pizza. It's also great with make-your-own pizza or pre-made pizza crusts!
- Instead of breakfast sausage, use Italian sausage for more kick.
- Cut up some crispy bacon or deli ham and use that in place of sausage, if you prefer.
- Replace the ground sausage with ground beef, chicken, or turkey if you have some to use up.
- Or, leave out the meat altogether for a vegetarian pizza breakfast bake.
- If you don't have a ton of leftover pizza, you can use frozen hash browns at the bottom of the prepared baking dish, too. (This is also a great way to make the breakfast stretch for big families!)
- There are tons of different ingredients you can add—that's the best part about pizza in general! Stir in your favorite pizza toppings, like red or green pepper, mushrooms, or pepperoni!
- The parmesan cheese adds great flavor, but you can omit it if you want.
- Feel free to use the red pepper flakes as garnish when serving if you're in mixed company (spicy and mild fans) or if you're cooking for kids.
💭 Things to know
Expert Tip: Pop the mozzarella cheese in the freezer for a bit to make it easier to shred!
- Don't use preshredded cheese! It has a coating on it that keeps it from melting right. Take an extra 2 minutes and shred it yourself.
- Quickly cut the leftover pizza into bite-sized pizza squares with a large, heavy chef's knife. You can also use a pizza cutter if you have one!
- The casserole is finished when the egg mixture is set, meaning it no longer jiggles in the center. Give the casserole dish a gentle nudge to check, first. It will read 160F on an instant-read thermometer when you stick it in the middle. Or, stick a toothpick in the center and look for raw egg.
- You can prep this easy pizza breakfast casserole ahead of time. Simply assemble the layers and cover the casserole dish with foil. Refrigerate until you want to bake.
- If you use a 9"x13" casserole dish, the mixture will be thinner and require less cook time. Watch it closely to avoid overcooking. I do recommend a square, 9"x9" pan for best results.
👩🍳 FAQs
Though I usually say that "chedda is betta," that's not so much the case in this recipe. You can still use it if it's all you have, but pizza already has Mozzarella on it, so it's best to stick with that.
Sure thing! Just be sure to cover the casserole tightly, and pull it out of the fridge to warm up while your oven is preheating. Leftover pizza casserole is a fabulous Christmas morning treat!
Pizza is pizza! Go ahead and use what you've got. Any slice of pizza will work no matter the flavor or style of crust.
