- ½ cup brown sugar
- ⅓ cup ketchup
- ⅓ cup soy sauce, reduced sodium
- ⅓ cup pineapple juice
- ¼ cup bourbon, or rum
- 1-½ teaspoons fresh ginger root, minced
- 1 teaspoon minced garlic
- 3 pounds boneless chicken thighs, or breasts
- green onions , garnish
Instructions
- Whisk all ingredients except chicken and green onion together.
- Reserve ¾ cup of the marinade mixture by placing in a covered container in the refrigerator.
- Place the chicken in a glass bowl or large freezer bag and cover with the remaining marinade.
- Cover bowl with plastic wrap and refrigerate for 8 hours or overnight. If you use a Ziploc bag you can just put it in the fridge on a plate or in a small baking dish.
- Remove the chicken from the marinade and throw the used marinade away. Pat chicken dry with paper towels.
- Grill chicken, covered, over medium heat for 6-8 minutes on each side or until it reaches 160℉ in the center. Baste with the reserved marinade during the last 5 minutes or so.
- Tent with foil and let stand 5 - 10 minutes. Sprinkle with sliced green onions and serve.
