🔪 Instructions
This is an overview of the instructions. Full instructions are in the green recipe card at the bottom of the page.
- In a large skillet, cook beef and chopped onion.

- Pour the soup mixture on top and sprinkle with more shredded cheese.
- Bake hamburger casserole in preheated oven for one hour.
🥫 Storage
Easy dinner recipes that make easy leftovers? That's what I call a win-win.
Let your casserole come closer to room temperature before storing or freezing it.
Then, keep the extra hamburger potato casserole in an airtight container for three to four days—refrigerated of course. Pop it in the microwave until it's warmed and you've got lunch (or dinner) again!
You can also freeze leftovers for up to three months. Store the casserole in freezer-safe containers and thaw in the fridge before reheating.
📖 Variations
- This is a great meal to make in advance! Prep the dish as directed, but before baking, wrap the assembled casserole tightly in plastic or foil. Refrigerate or freeze—let it thaw in the fridge before baking.
- Swap the meat. Any ground protein will work well. Turkey or pork are some good options. Or, use a meat mixture, combining hamburger meat with another type. No one will know but you!
- No cheddar? No problem. Try it with American or Colby-jack. I'd avoid milder flavors, though, like mozzarella cheese.
- What kind of potatoes? If you can't find the Yukon Golds recommended in this delicious hamburger potato casserole recipe, use Carola or red-skinned potatoes.
- Experiment with fun mix-ins. Depending on what you've got a taste for, try stirring in some cauliflower, bell peppers, or mushrooms.
- Don't forget the garnish! A dollop of sour cream and some extra seasonings, like parsley, finish off your dish as a chef would!
- Try topping with these copycat French's Fried Onions.
💭 Things to know
Expert Tip: Yukon Gold potatoes don't have to be peeled, so they're the perfect time saver in this recipe. However, if you swap them for something else, like Russet potatoes, you'll want to remove the skin.
- Don't forget to drain off the excess fat from your beef before stirring it into the potato casserole recipe. Otherwise, it can taste oily.
- Buy pre-diced onions in the produce section to save prep time—and avoid onion-induced tears!
- A mandoline slicer can help you quickly cut the potatoes into similar-sized slices. Use the mandoline guard to avoid cutting yourself!
- However, a sharp knife will also do the trick (Though, if you've made sliced potatoes au gratin, you know this step can be a bit tedious.)
- Shred a block of cheese for the best results. Pre-shredded has a waxy texture—once you notice the difference, it's hard to go back!
- Spritz the underside of the aluminum foil with the non-stick cooking spray to prevent it from sticking to and peeling off your top layer of cheese.
