📖 Variations
- My recipe uses thin, boneless pork chops, but bone-in pork chops will work, too. You’ll just need to increase the overall cook time a little bit.
- You can also substitute with sliced pork loin, which is slightly leaner than pork chops.
- If you can’t find condensed French onion soup, at least use French onion soup mix and beef stock or chicken stock, or sour cream and French onion dip mix—all the great onion flavor is what makes this French onion pork chops recipe so delicious!
- Feel free to swap out the provolone cheese with slices of Swiss cheese or gruyere cheese.
- Add a splash of dry white wine, a teaspoon of Worcestershire sauce, or a teaspoon of garlic powder to the gravy for more savory flavor.

🥫 How to store leftovers
These easy French onion pork chops make great leftovers! Store leftover chops in an airtight container in the fridge for up to four days.
Reheat pork chops in a baking dish or on a lined baking sheet covered with aluminum foil in a 350-degree oven or air fryer for 10-15 minutes. Otherwise, quickly warm leftovers in the microwave—just don't overheat 'em.
Freeze pork chops for up to three months in an airtight container. For best results, thaw them in the fridge before reheating.
Expert tip:
Use a large cast-iron, ovenproof skillet to make the best pork chops. Cast iron creates that lovely crust on the meat, plus you can put it straight in the oven—aren’t one-pot recipes great?
💭 Things to know
- If your pork chops are thicker than 1 inch, they’ll need to be baked a little longer in the oven.
- Cut the onions in half, then into crescent-shaped slices. They’ll look way too big at first, but they’ll soften up and cook down considerably on the stovetop.
- The pork chops are done baking when they reach an internal temperature of 145 degrees F on a meat thermometer. They’ll still be a tad pink in the middle—they’re supposed to be!
- Always let meat like pork rest for a bit before cutting into it. This will let the juices redisperse so each bite of chops is juicy and delicious.
- Garnish your baked chops with fresh thyme or parsley to enhance the French onion flavors.
- Reheat leftover chops with a couple of tablespoons of chicken broth or beef broth to prevent them from drying out.
👩🍳 FAQs
Sure! Follow the recipe as directed, but add an extra 3-5 minutes to the baking time since bone-in pork chops take longer to cook. Use a meat thermometer to check the internal temp to make sure they’re done.
Yes, ma'am—if you want juicy, flavorful pork chops, that is. Searing caramelizes the outside surface and locks in both flavor and juice.
Don't cut in and look for color—that is a surefire way to end up with dry meat (pork, steak, etc.). Instead, stick the probe of an instant thermometer in the thickest park of the chop, near the center. Pork is safe and done when it hits 145 degrees F.
First step: get one for next time! If you don't have a skillet, prepare the recipe using a frying pan. Transfer the pork chops to a casserole/baking dish and dump the onion soup and caramelized onion mixture overtop. Continue and bake as directed.
