I have had vacation on the brain for weeks. In the past couple of years we've taken cruises with the kids but this year, between Sean's surgery and other stuff there was no way. I still wanted to take some sort of vacation so we rented a condo on the beach in Port Aransas. It's right on the beach, just a quick walk over the dunes. I plan on spending a lot of time looking for shells and jumping waves. My daughter and son-in-law are going to live here for the week to take care of the house and dogs/cats. Plus, it kind of gives them a vacation since the house is bigger, there's a deck and pool, and more property. I am so blessed that they're willing to stay.
Anyway, one of the things I've enjoyed on the cruises was to sit out on the balcony with a tropical drink and just watch the ocean and the sky. Fruity, tropical drinks just seem to be the epitome of summer vacation, don't they?
I wanted a little more coconut flavor than is usually in a Mai Tai so I decided to blend a little Coco Lopez in with the fruit juice. WOW!
I am not going to tell you that drinking this is going to give you the same feeling as sitting on the balcony and watching the ocean, or laying on the beach, or even sitting by a pool. Well, maybe if you drink enough... What I can promise is that this stuff is really good.

Coconut Mai Tai

- 2 ounces spiced rum
- 1 ½ ounce coconut rum
- 1 ounce cream of coconut
- 2 ounces orange juice
- 2 ounces pineapple juice
- 1 teaspoon grenadine
- 1 Maraschino cherry
- Ice
Instructions
- Add all of the ingredients except the cherry to a shaker with ice.
- Shake until well blended.
- Strain into a glass.
- Add the cherry and ice if desired.

We love cruises too. My favorite part is also sitting on the balcony with a cocktail. I love watching the water and looking for dolphins. This drink will bring me right back there.
