Chicken Taco Casserole

- 21.5 ounces cream of chicken soup
- 1½ cups sour cream
- 14 ounces RoTel
- 15 ounces black beans, rinsed and drained
- 1 ounce taco seasoning
- 4 boneless skinless chicken breasts, cooked and shredded (or cubed)
- 12 ounces tortilla chips, crushed
- 2 cups shredded cheddar cheese, divided
- ¼ cup green onions, sliced
- ¼ cup cilantro, chopped (optional)
Instructions
- Preheat oven to 350 degrees.
- Spray a 9 x 13 inch baking pan with no stick cooking spray.
- In a large bowl combine the chicken soup, sour cream, RoTel, black beans, taco seasoning and chicken.
- Set aside.
- Coarsely crush the tortilla chips and spread half of them on the bottom of the prepared dish.
- Spread half of the chicken mixture over the tortillas.
- Top with 1 cup of cheese.
- Repeat layers.
- Cover the baking dish with aluminum foil.
- Bake for 30 minutes - remove foil.
- Bake for 10 minutes, until bubbly and cheese is starting to brown.
- Top with cilantro and green onions before serving if desired.

This was pretty good. I tend to make changes to recipes based on what I have on hand and what I can make healthier, so I can't truly rate this one. But what I made was good, so I estimate the true version is excellent. (I have a lactose intolerance child and I'm on WW.)

Third recipe of yours and yet another big hit. Now I forgot to add the taco seasoning and only noticed the packet when I had finished the last layer of cheese. So what I did was add shredded lettuce and salsa to the top. My son picked his burn your stomach version and Dad and I had mild Chunky Pace. It worked! There was plenty of flavor and that way we each seasoned our own.
My other change was canned chicken. Lazy, but since you use cooked chicken it worked fine. Thanks for another great dinner.
