- 1 cup frozen diced onions
- 1 teaspoon poultry seasoning
- Salt and pepper
- 2 cups Red Lobster Cheddar Bay biscuit mix, for copycat see notes*
- 2 cups milk
- 2 cups chicken stock
- 10.5 ounces cream of chicken soup
- fresh parsley, chopped for garnish
Instructions
- Heat oven to 350°F.
- Spray a 13x9-inch pan with no-stick cooking spray.
- Pour the melted butter in the pan.
- Layer the chicken in the bottom of the pan.
- Top with the vegetables.
- Season with the salt, pepper, and poultry seasoning.
- Mix together the milk, biscuit mix, and seasoning packet that comes with the mix.**
- Pour the biscuit mix mixture over the chicken and vegetables but don't mix.
- In a medium mixing bowl whisk together the stock and soup.
- Pour over the top but don't mix.

For a crispier crust, add 1-2 cups of grated cheese to the biscuit mixture, pour the soup mixture over the chicken and veggies, pour the biscuit mixture over that and smooth out. Cooking time is the same. Also good with cooked sausage or chopped ham instead of chicken.
