Once the leftover cheeseburger pot pie has cooled to room temperature, refrigerate it in an airtight container for up to four days.
Pot pies don’t freeze great, but you can store leftovers in the freezer for up to three months. However, the pie crust gets a little soggy after thawing.
Reheat leftovers in an oven or air fryer at 350 degrees F for 10-15 minutes to make the crust nice and crispy again.
I don’t recommend reheating leftovers in the microwave since it will make the flaky crust a little gummy.

Remember, fully brown the ground beef and onions over medium heat before adding the pastry on top. Raw meat won’t cook thoroughly in 20 minutes of baking time.

Cheeseburger Pot Pie

- 2 pounds lean ground beef, I used 90/10
- 2 cups onion, peeled and chopped
- ½ cup boiling water
- 1 tablespoon Beef Better Than Bouillon
- ¼ cup pickle relish, sweet or dill
- Salt and pepper to taste
- 8 ounces sharp Cheddar cheese
- 1 sheet puff pastry, thawed
- sliced green onions for garnish
Instructions
- Preheat the oven to 400F.
- Mix the bouillon with the hot water.
- Cook the beef and the onions in a heavy cast iron skillet.
- When the beef is browned and the onion is tender pour off any accumulated fat if necessary.
- Stir in pickle relish and bouillon.
- Turn off heat.
- Spread the Cheddar cheese over the top of the ground beef mixture, reserving ½ cup for the top if desired.
- Remove the puff pastry from the refrigerator and roll out so that it's large enough to cover your skillet or casserole dish.
- Carefully lay it over the cheese layer.
