Creamy Blue Hawaiian Cocktail

- 1 ½ ounces white rum
- 1 ½ ounces blue curacao
- 3 ounces pineapple juice
- 1 ½ ounce cream of coconut, like Coco Lopez. Also called creme de coconut or creme of coconut. This does not contain alcohol.
- 1 cup ice
- blue sugar crystals
- maraschino cherries, for garnish
Instructions
- Dip fingers in cold water and run around the rim of a glass.
- Pour sugar crystals into a flat dish.
- Roll cup rim in the sugar crystals to coat.
- Set aside.
- Add the rum, Blue Curacao liqueur, pineapple juice, cream of coconut, and ice to a blender.
- Blend until smooth.
- Pour into a glass, top with a maraschino cherry, or garnish with a pineapple wedge, and serve.
