Did you hear that now the peanut butter recall has been expanded to include all peanut products, including roast peanuts, and all the way back to January 1, 2007?
I figured that I was pretty safe because I make my own peanut butter but apparently not. How are you going to know where the peanuts were roasted? Grr…makes me mad!
But…all is not lost!
If you have a blender or food processor and a few minutes you can make some tasty alternatives to peanut butter.

I like tea cakes. They aren’t too sweet, they aren’t hard to make, and they aren’t impressive, they are just comfortable to have around.
Sort of like reading a book that does not challenge you in the least but satisfies you deep inside, you know?
Tea cakes. A really good tea cake should look nice enough to put on a tea table but be plain enough that you can serve leftovers for breakfast next to some eggs and bacon. Right?
This one will do it.

When the rep from I Can’t Believe It’s Not Butter contacted me about reviewing a new product I was leary. I mean, I always say use real butter, right?
Well I still think that there is nothing that can compare to real butter. BUT I also know that some of us could stand to lose a pound or two, or ten. Some of you are on special diets because of your health, and some of you prefer to not use butter. I get that.
So, I agreed to try the product.

My week has gotten away from me. Personally, I would like to go back to start over again, starting with about 5 a.m. Monday morning.
Why?
Because that was the time I was at Panera Bread in Cedar Hill, Texas gnoshing on all sorts of amazing food, slurping coffee in my brand new coffee cup and chatting with Jason Russel (Gen, Mgr.), Stan Sears (comedian Bakery Training Specialist), and Krista Moberg (Marketing). And I had a blast.
These people LOVE their jobs, and to me that says a lot about Panera.

I don’t know if you remember my interview with Brad Halpern of Eggology last summer, or the review I did of the eggs…but he has kindly offered the readers of Baking Delights four mini-carrot cakes from their Simply Sensational line of baked products made with egg whites instead of whole eggs for lower fat.
